Lattice Apple Walnut Tart (Print View)

Thinly sliced apples woven into lattice atop a sweet walnut and honey base, perfect for fall.

# What You’ll Need:

→ Crust

01 - 1 1/4 cups all-purpose flour
02 - 1/2 cup unsalted butter, cold and cubed
03 - 2 tablespoons granulated sugar
04 - 1/4 teaspoon salt
05 - 3 to 4 tablespoons ice water

→ Filling

06 - 1 cup walnuts, chopped
07 - 1/4 cup honey
08 - 2 tablespoons light brown sugar
09 - 1/2 teaspoon ground cinnamon
10 - 1/8 teaspoon salt

→ Lattice Top

11 - 3 large apples, thinly sliced
12 - 1 tablespoon lemon juice
13 - 2 tablespoons granulated sugar
14 - 1/2 teaspoon ground cinnamon

# Directions:

01 - Preheat oven to 375°F. Grease a 9-inch tart pan or pie dish.
02 - In a bowl, combine flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing until dough just forms. Press dough evenly into the pan bottom and up the sides. Prick base with a fork and chill for 15 minutes.
03 - Line crust with parchment paper and fill with baking weights or dried beans. Bake 12 minutes, remove weights and parchment, then bake 5 more minutes until lightly golden. Allow to cool slightly.
04 - Combine chopped walnuts, honey, brown sugar, cinnamon, and salt in a bowl. Spread mixture evenly over cooled crust.
05 - Peel if desired, core, and slice apples very thinly (about 1/8 inch). Toss slices with lemon juice, granulated sugar, and cinnamon.
06 - On parchment, arrange half the apple slices in parallel rows, slightly overlapping. Weave remaining slices over and under to create a lattice. Transfer carefully onto tart, trimming edges as needed.
07 - Cover tart loosely with foil and bake 20 minutes. Remove foil and bake an additional 10 to 15 minutes until apples are tender and golden. Cool at least 20 minutes before serving.
08 - Drizzle with extra honey if desired. Serve warm or at room temperature.

# Expert Advice:

01 -
  • It looks like you spent hours in the kitchen, but the lattice is deceptively simple once you understand the weaving.
  • The contrast between crispy, caramelized apples and the rich walnut-honey base underneath makes every bite interesting.
  • It's naturally vegetarian and feels elegant enough for a dinner party but casual enough for a quiet evening with someone you love.
02 -
  • Your crust will only be flaky if you keep the butter cold and don't overwork the dough—this is non-negotiable, and it's worth chilling between steps if your kitchen is warm.
  • The thinner you slice your apples, the more elegant the final result, but also the more forgiving the baking time becomes because they cook faster.
03 -
  • If your lattice starts to stick while weaving, chill it on the parchment for a few minutes before transferring it to the tart.
  • The moment you smell cinnamon and caramelizing apples coming from the oven is when you know it's going to be good.
