# Directions:
01 - Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a medium bowl or large jar.
02 - Mix matcha powder, peppermint extract, and green food coloring (if used) with 2 tablespoons of the chia mixture until smooth.
03 - Stir the matcha-mint mixture back into the main pudding base until evenly combined and vibrant green.
04 - Cover and refrigerate for at least 4 hours or overnight until thickened to a pudding consistency.
05 - Stir pudding well before serving and portion into bowls or glasses.
06 - Garnish with dairy-free yogurt, cacao nibs, chopped mint leaves, and fresh berries as desired.
