01 - 1 cup raw cashews
02 - 1 cup pitted Medjool dates, approximately 10 large dates
03 - ½ cup unsweetened shredded coconut, plus extra for rolling

05 - 2 tablespoons fresh lime juice
06 - 1 teaspoon pure vanilla extract
07 - Pinch of sea salt

# Directions:

01 - Place cashews in a food processor and pulse until finely chopped but not processed into a paste.
02 - Add pitted dates, shredded coconut, lime zest, lime juice, vanilla extract, and sea salt to the food processor. Process until the mixture sticks together when pressed, approximately 1 to 2 minutes.
