  • Pickles & Veggies: 8–10 dill pickle slices (or pickle chips) patted dry, 1 small jalapeño thinly sliced (optional for extra heat), 2 tablespoons pickled jalapeños chopped (optional)
  • Spices & Extras: 1 teaspoon hot sauce (optional), ½ teaspoon garlic powder, ½ teaspoon smoked paprika, Freshly ground black pepper to taste

Instructions

Step 1:
In a bowl, mix together cheddar, mozzarella, garlic powder, smoked paprika, and black pepper. Stir in hot sauce if using.
Step 2:
Lay out bread slices on a work surface. Butter one side of each slice.
Step 3:
Flip 4 slices so the unbuttered side faces up. Evenly distribute half the cheese mixture on these slices.
Step 4:
Layer pickle slices and jalapeños (if using) over the cheese. Sprinkle remaining cheese mixture on top.
Step 5:
Close each sandwich with the remaining bread slices, buttered side facing out.
Step 6:
Heat a large nonstick skillet or griddle over medium heat. Cook sandwiches 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
Step 7:
