Snowman Crudités with Dip (Print View)

# What You’ll Need:

01 - 1 large cauliflower head, cut into florets
02 - 1 large cucumber
03 - 2 medium carrots, peeled
04 - 1 small red bell pepper
05 - 1 small yellow bell pepper
06 - 6 cherry tomatoes
07 - 1 black olive

→ Dip

08 - 7 oz (200 g) Greek yogurt or sour cream
09 - 2 tbsp mayonnaise
10 - 1 tbsp lemon juice
11 - 2 tbsp fresh chives or dill, finely chopped
12 - 1 garlic clove, minced
13 - Salt and pepper, to taste

# Directions:

01 - Slice the cucumber into 0.4 inch rounds. Cut one carrot into sticks for the arms, and peel thin ribbons from the other carrot for the scarf. Slice bell peppers into small strips and pieces for the hat, buttons, and scarf accents. Slice the black olive into thin rounds for eyes and mouth.
02 - On a large serving platter, arrange three cauliflower florets vertically in increasing size to form the body. Place cucumber rounds at the base to represent snow. Add carrot sticks for arms and carrot ribbons around the neck as a scarf. Use black olive slices for eyes and mouth, a small carrot piece for the nose, and bell pepper strips to create a hat and buttons. Surround the snowman with cherry tomatoes and remaining vegetables as additional crudités.
03 - In a small mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, chopped chives or dill, and minced garlic. Season with salt and pepper to taste.
04 - Place the dip in a small bowl on or next to the platter for dipping.
