01 - 12 oz fusilli

02 - 5 oz smoked bacon, diced

03 - 1 large yellow onion, thinly sliced
04 - 9 oz cremini mushrooms, sliced
05 - 2 cloves garlic, minced
06 - 2 tbsp fresh parsley, chopped

07 - ⅓ cup grated Parmesan cheese

08 - 2 tbsp olive oil
09 - Salt and freshly ground black pepper to taste
# Directions:
01 - Bring a large pot of salted water to a boil. Cook fusilli until al dente according to package instructions. Reserve ½ cup pasta cooking water, then drain the pasta.
02 - Heat a large skillet over medium heat. Add diced bacon and cook for 4 to 5 minutes until crispy. Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
03 - Add olive oil to the bacon fat if necessary. Add sliced onions and sauté for 3 to 4 minutes until softened and golden.
04 - Add mushrooms to the skillet and cook for 5 to 6 minutes, stirring occasionally, until tender and lightly browned.
05 - Stir in minced garlic and cook for 1 minute until fragrant.
06 - Return crispy bacon to the skillet. Add cooked fusilli and toss to combine thoroughly. If the mixture appears dry, add reserved pasta cooking water as needed.
07 - Remove from heat. Stir in chopped parsley and half of the grated Parmesan cheese if using. Season with salt and freshly ground black pepper to taste.
08 - Plate immediately and garnish with remaining parsley and Parmesan cheese.
