08 - 1 medium crisp apple (Granny Smith or Honeycrisp), thinly sliced
09 - 4 ounces sharp cheddar cheese, sliced or shredded
10 - Freshly ground black pepper, to taste

# Directions:

01 - In a skillet over medium-low heat, melt 1 tablespoon butter with olive oil. Add the sliced onion and salt. Cook, stirring frequently, for 15 to 18 minutes until onions are deeply golden and soft. Add sugar halfway through if extra sweetness is desired. Set aside.
02 - Arrange bread slices on a flat surface. Spread butter evenly on one side of each slice. On the unbuttered side, layer half of the cheddar cheese, followed by caramelized onions, apple slices, a sprinkle of black pepper, and the remaining cheddar. Close with the second slice, buttered side outward.
03 - Heat a nonstick skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently, until the bread turns golden brown and the cheese melts. Lower heat if bread browns too rapidly.
04 - Remove sandwiches from the skillet. Allow to rest for 1 to 2 minutes before slicing. Serve warm.
